Having the great fortune of living in the Napa, Valley (when I’m not on the road as a boomer ambassador) I take my inspiration from the art and spirit of wine. Wine, you see, has the good sense to improve with age. In fact, the finer the wine, the better it gets over time.

The same can be said of the best of us boomers. We develop compassion, generosity and courage. We become, as do our favorite wines, “more complex.” That said, I don’t personally know anybody who would willingly speed up the aging process.
Not so with wine. A new product, Clef du Vin, has been introduced which uses a copper alloy to quickly oxidize wine to give it a vintage taste. You dip the Clef into the glass filled with wine, and add a year. Wine critics prefer organic aging, of course, but there are purchasers for the product at $100 a pop—who like the idea of monkeying around with time. (http://www.wineenthusiast.com/)
As for me, while I appreciate the benefits of aging personally, I’ll go the organic route and keep the oxidation in the bottle.
